Why Chocolate?
During the operation of the bakery, the couple noticed that sales were generated mostly from choc’o mallows, yema, cupcakes and cakes. The demand in the production of cupcakes and cakes was hard to meet because they could not afford to hire additional labor. Besides, they didn’t want to sacrifice the quality of their products. After some time, German learned the basics in baking through exposure and practice, and was primarily tasked to bake the cakes while Liza did the design and decoration of the cakes.
Yema was fast-selling but there was a problem with regards to its shelf life. Sales from molded chocolate and mallows were brisk and profit was very rewarding and inspiring. Due to these factors, they decided to focus on chocolate-based products.
In 1995, they decided to expand their product line and their market. They knew then that their main market would be the tourists that come to Baguio and bring home pasalubong for their friends and families. They also knew that they have to offer something different from the usual peanut brittle, strawberry jam, etc. The couple was aware that there were too many players in those lines of products.
Experimentations were done to come up with the chocolate-based products that they would sell in the city market. One experiment stood out among the rest which they believed would be a bestseller. On the occasion of Baguio Day on Sept. 1, 1995, MIKA’SAN Choc’o Flakes was introduced in the Baguio City Market.
What Other Products Do We Offer?
In the beginning, there were only two main products: Choc’o Flakes and Choc’o Pinipig. To this day, these two remain as the banner products of MIKA’SAN. They come in several variants and packages. We have dark chocolate, white and mix variants for both choc’o flakes and choc’o pinipig. They are packaged in big jars, half-tall, and tiny or cute sizes.
Other choco-based products that we produce are the MIKA’SAN Bonbons line – choc’o flakes bonbons, choc’o berry-nut, choc’o mint crisps, choc’o mallows, choc’o yem nut, choc’o crumbles and choc’o roc-o.
